Unlike neighboring regions with more flexible bottling standards, this denomination enforces strict production thresholds: the maximum grape-to-wine yield is capped at 70%, and exceeding 75% results in the entire batch losing its DOC status. Furthermore, any wine qualifying for the 24-month Riserva aging designation must be sealed exclusively with a cork closure, safeguarding these dry and intense Umbrian reds.
