Centered in twelve municipalities including Caldiero, this denomination distinguishes itself from dry Soave neighbors through the mandatory drying of Garganega grapes, which must make up at least 70% of the blend. This drying process limits the final wine yield to a maximum of 40% from a maximum grape yield of 9.0 tons per hectare. Uniquely, while a sparkling spumante version is permitted, the Classico designation is strictly reserved for the non-sparkling style, which cannot be released before September 1 of the year after harvest.
