To manage quality, the disciplinare mandates a maximum yield of 15.0 tonnes per hectare. Furthermore, both Rosso Riserva and Nero di Troia Riserva require 24 months of aging, with at least 8 months in wood, from November 1 of the harvest year to develop their characteristic ruby-red color.
